Breakfast
Breakfast is my favorite meal of the day! Most people don't like to take the time for breakfast, prefering to grab a muffin, an orange, and a cup of coffee before work. Not me! I'm a firm believer in taking the time to start your day right with anything from a bowl of cereal to quick breads and pancake dishes like New Jersey Jonny Cakes. There's nothing quite like sitting on the balcony overlooking the river early in the morning, eating my breakfast and sipping tea.
New Jersey Jonny Cakes
Serves 2
1/3 cup Corn Meal
1 tablespoon brown sugar
1 egg white
2 tablespoons wheat germ
3 tablespoons fat-free milk
2 tablespoons blueberries, crushed
2 tablespoons blackberries, crushed
Mix all items together in a small bowl. Pour small circles on griddle or frying pan coated with cooking spray. Cook until outsides are crusty and firm but not burned. Can be topped with butter or margarine and syrup or powdered sugar or eaten plain.
Based after a recipe for Rhode Island Jonny Cakes I saw in a New England recipe book from the 1950s.
